Pot Pie Obsession

Yesterday I got to read about Ashley’s veggie pot pie, Katie’s homemade pie she made this weekend, and of course to torture myself more, I went back and drooled over Lorie’s Tasty Tuesdays pot pie. I left determined to be having pot pie in my belly that evening.

Of course by the end of the list (which also included a pie dish because I realized that yeah, we didn’t have that either), I was already overwhelmed and trying to figure out when in the world this evening I would find time to get the ingredients and make the darn thing. After I got home from work, Cale and I went to the gym and got done at eight. That left us one hour before we had to be home for Heroes. So we went to Whole Foods because I had read that they have freshly prepared dinners; maybe pot pie would be one of them? Nope.

We hopped right back into the car and went to Safeway to purchase the one pot pie that Cale could overlook as not homemade: Marie Callender’s. See what a good wife I am? I stuff my husband full of over one thousand calories right after we go to the gym. And I got myself a much healthier version.

The instructions are much easier for these. Instead of chopping vegetables and laying out pie crusts, you just preheat the oven to 400 degrees, put them on a cookie sheet, and then let them bake.

You know I almost feel bad, especially after reading Ashley’s quest for all things homemade, but then I remember, hey it’s me. And I’m on my own quest to acknowledge that I cannot be perfect and do it all. And that now includes accepting the fact that I only enjoy slaving away in the kitchen every once and a while. Though I will say that I do want to make my own pot pie very very soon.

Just not on a weeknight.

To Tri and To Succeed

Well my friends, it is 9pm on Saturday evening, and I AM ALIVE. For reals though, the triathlon exceeded all my expectations. I loved it. And I did well. And I’m proud of myself.

Pretty good for a Saturday morning.

I woke up so incredibly nervous. Once we got to the park, I immediately wanted to walk right out after seeing the masses of people that were there. Some people were pros and took themselves super seriously. I set up my bike and everything and waited around until our start time. My age group started 15 minutes after the first group. The longest fifteen minutes of my life. The swim went by so fast. Cale thinks I finished about sixth in my age group, which isn’t bad for being out of the water as long as I have. The bike was long, but was not hard at all. The people with fancy-pants road bikes zoomed by me, but otherwise I was right in pace with everyone. Then the run. This was the part that I was most worried about. I won’t lie, I did walk twice, but only up the two steepest of the four hills. The rest of the run I trudged along and had no clue how much longer I had left. So I just ran and ran some more.

The finish was surreal. There were so many people. It was really great. And I would consider doing another. Because it was awesome.

I’ve spent the rest of the day pretty darn tired. But we did celebrate by going to cheesecake factory and splitting a slice. Boy did I earn it!

And the finish line! I was so happy to see this. My head in somewhere in there. 1:40 minus our fifteen minute late start = 1:25. Not bad at all!

Oh yes and I cut my toe entering the lake at the beginning of the swim. So this is what I got to see at the end of the race. It still hurts.

Rewarding myself. We were done early enough to still make it to McDonald’s breakfast!

Isn’t he sweet?? He was a great cheerleader and photographer. I was so happy when I saw him along the course. And even more at the finishline!

A growing family

I love my cousins. Have I not said that enough on this blog?

Well I do. And on October 24th, I will officially have two more. My Jessica and her husband Luke have been fostering little Faith and Jason for almost a whole year. And from the moment those two stepped into their door they were their children. I got to see my cousin Jessica who I’ve known my entire life become a mother overnight. And a pretty amazing one at that. She went from an empty home to one with a two year old and a three year old. Two children who were so thirsty for love. And it’s a great fit, because with both Jessica’s and Luke’s families, there is plenty of love to go around. They have been their children for a year, and now we can all breathe a huge sigh of relief because they will now be their children for life.

Recently Jessica got to sign her very first birth certificates, and when I read what Luke described about the moment, I most definitely shed a tear or five.

This past weekend I got to spend more time with all my little cousins, which is time I just adore. I love seeing them grow up and learn.

Okay this was from this past Easter, but how could you not adore them?? They are too cute!

Someday we’ll contribute to this little group of young ones, but until then I’m just going to enjoy my cousins and wait for the next one on the way.

This Saturday at the bright hour of eight in the morning, I will be starting off my 400 yd swim, 11 mile bike, and 3 mile run. This really came up from out of nowhere, but I’m not quite as nervous as I was a couple weeks back. I’ve been running regularly and just keeping active. The running was the one thing I was the most worried about. I can run three miles, but running three miles after swimming and biking is something I have not done before. Then to hear that this course has hills, my anxiety peaked. I just have to remember to maintain my form and to use my arms. They are not just there for decoration. This week I snuck in my two other workouts: the bike and the swim.

Yesterday Cale and I dusted off the bikes and went for a seven mile ride. This was my very first bike ride that did not include rainbow streamers coming off my handlebars and a big pink horn. And you know what? It was not hard at all. I got used to the gears and changing them when we came to hills. The second half I was able to get a good speed going. The only thing that stopped us from going further was the sun setting. Bike riding may have to become a regular activity for us. We have such a wonderful road near our house to take that hardly any cars use, and we saw deer while we were on our ride. And if you know me, if I see a deer that officially makes my entire day. I’m sold on this whole biking thing.

Tonight we went to the gym, and I got in the pool for my first swim in over two years. My arms were definitely a little tight afterward, but it was nothing I couldn’t handle. Once again I need to remember to swim with good form and make sure that each stroke is complete and to make each one count. No use in wasting energy by not finishing my pull. All these little things will hopefully pay off and make my effort a little easier.

Overall, I am going into this event with optimism. I’m excited for a new challenge. It is definitely not something I cannot handle. I know the most difficult part will not be the physical part, but the mental game I will have to overcome. My mindset is that it will just be a long workout. I will just have to remind myself that “You are not going to die.” My ultimate goal is to run the entire run. If I accomplish that, then I will call this a success.

And if nothing else, at least at the finish line I get a free Pyramid beer.

Yeah I have my priorities in order
