I cooked last Sunday night out of my Veganomicon cook book. And I’m just now blogging about it. Please forgive me. I’m great at thinking of things to blog about, but not so great at the execution.

The Bad:
- Safeway does not carry Quinoa. The main part of my recipe.
- The bitchy checkout clerk who reassured me many many times that I grabbed watercress and not mint. Okay I get it! It was labeled wrong and I don’t know my herbs. Stop lecturing me!
- Our knives are dull.
- Knocking an open bottle of soy sauce into your silverware drawer makes a mess.
- I cannot cook without drinking a beer to calm my nerves. This is a fact.
The Good:
- Luckily Trader Joes was nearby to save the day with their Organic Quinoa.
- Trader Joes’s mint was clearly labeled. Saving the day again.
- Dull knives may be the only reason why I still have fingertips right now.
- Our silverware holder is now clean thanks to my husband who cleaned out the soy sauce.
- I had a nice buzz going on by the time the food was ready.
But you know what.. it turned out good! Like WOW good. Like this actually has flavor, and I would eat this again good. I’ll definitely have to try more things out of the cookbook. Especially since my stomach has decided it no longer would like me to eat cheese. Last night’s grilled cheese from In N Out about killed me. Why?? Why Stomach Why??!

Sidenote: Umm a thousand thanks for the compliments in my last post. I think I will have to have that post in my favorites and any time I feel in a poopy mood, just reread all your lovely comments. You guys are the sweetest. times a billion.

Quinoa is a staple around here! We’ve even found Quinoa noodles and used those for lower glycemic pasta.

They say leave out the cheese for vegan. There is also soy cheese and rice milk cheese, which I don’t mind if it is melted. It’s pretty nasty cold though…
No more cheese? Oh, that is just about the saddest thing I’ve heard all day.
Quinoa is the best! We tried it about 3 weeks ago and we have it about 3-4 times a week now. The kids love it, too.
I found these Tofu Shirataki noodles at the health store and they look weird in the package, but they are low cal and not bad. They are a little bit more chewy than regular noodles (I’m a whole wheat pasta girl) but they make a good substitute.
Is it weird that I didn’t know what Quinoa was until I read Elizabeth’s comment?
Anyhoo, that looks delicious, I love pineapple! And we need a Trader Joe’s here. I keep hearing excellent things about this place.

Also, Vegan with a Vengeance = best vegan (or otherwise) cookbook EVER. I seriously cannot go wrong with it. I made scones this weekend from it – a-mazing.
I’ve never had Quinoa and have actually wanted to try it for so long! This sounded tasty, i think my husband would really like it, i wanna give it a try! and i love that you said you couldnt cook without beer in hand LOL That is my day EVERYDAY after 5pm, for some reason my entire world turns UPSIDE DOWN shorty after the clock hits 5 and i need to have either wine or a beer in my hand shortly thereafter….or someone WILL get hurt. ;D
oh gosh, my mother would be so ashamed if she read that lol! Shhhh!

You know, that DOES look good — & for me, being the finicky eater that I am, that is a compliment! I would be willing to try it, I think. ;]
& also, I am so in love with in & out grilled cheeses, too. But the last time I had it, my stomach wasn’t very happy either! & I was like, What the hell? :[ Maybe it was the onions...

I have never seen any food like that! I’m so intrigued! I seriously need to try some tasty, healthy recipes. All of this unhealthy crap is too easy.
And I cringed for you at the soy sauce in the silverware drawer. THAT must have been fun to clean up

Quinoa is a really small grain, similar to couscous. You cook it similar to how you cook rice

thanks I will have to check out that cookbook. It’s hard when you go veggie because all the cookbooks we got for wedding presents really don’t have much I can eat anymore. Probably time to donate those or something
That dish looks really tasty! Congrats for not giving up after the biotchy supermarket girl and having to go to ANOTHER store and the soy sauce incident. And yay for Cale cleaning up the soy sauce incident! Man, I really really need to cook a veggie dish from my cookbook. I keep saying that, but I should actually just do it.

I actually always get the veggie (the same, just no cheese) because I hate American cheese.
I have an amazing recipe for tofu “chocolate cheesecake”… maybe I will share it with you…?
